Hokkaido-grown rice polished to 55% is used in this ginjo from Nippon Seishu in Sapporo, stored on ice before bottling for a uniquely chilled freshness. The brewery, established in 1872, uses the pure snowmelt water of the Toyohiragawa River for a clean, apple-tinged ginjo style.
