使用山田錦的遺傳親本——歷史悠久的滋賀縣產米「短桿渡船」,精米步合80%,在愛庄町的藤井本家以生酛釀造法精心釀製。這座創業於1831年的酒藏自1945年起便向宮中獻上御用酒,不添加人工乳酸,而是以天然乳酸菌培育出獨特的酸味。
