Eiko Shuzo, founded in 1897 in Matsuyama City, Ehime Prefecture — the city home to Dogo Onsen, Japan's oldest hot spring — draws brewing water from the Wakigafuchi spring of the Takanawa mountain range. The brewery uses Ehime-grown sake rice including the prefecture's first original variety, Shizuku Ehime, alongside Yamada Nishiki and the local Matsuyama Sanmai, producing a lineup sold under the Shuseneiko label that has won consecutive gold medals at the National New Sake Tasting Competition and gold at international competitions in France, the United Kingdom, the United States, and Italy. In recent years the brewery has also gained recognition for fruit liqueurs made with Ehime citrus and other regional produce.
