Koshitanrei was bred from Yamada Nishiki and other varieties to express Niigata's characteristic softness and elegance, and its use in a tokubetsu junmai highlights the variety's suitability for the region's gentle water. The result is a clean, food-friendly sake that embodies Niigata's brewing philosophy.
