This junmai ginjo from Inoue Shuzo in Tochigi is pressed using the fune soushibori tank method and bottled as a muroka unfiltered, honnama unpasteurized sake, combining traditional pressing technique with minimal intervention processing. The fune press preserves the aromatic delicacy of ginjo-grade rice without the force of mechanical alternatives, while muroka and honnama treatment keep the sake vivid and texturally expressive. The result is a junmai ginjo of notable freshness and a soft, complex mouthfeel.
