Dewa Sansan, Yamagata's signature sake rice, is the base for this hiyaoroshi seasonal release, bottled as a namazume genshu after a summer of maturation. Hiyaoroshi sakes receive a single spring pasteurization and are shipped in autumn without a second heat treatment, delivering a mellow, rounded character.
