Fukuoka-grown Yamada Nishiki milled to 60% forms the base of this junmai ginjo, which offers a moderate ginjo aroma alongside a gently dry, balanced flavor suited to food pairing. Traditional koji-buta methods and low-temperature fermentation are used at this brewery established in 1673.
