Kotsuzumi Daiginjo is the premium non-junmai expression from Nishiyama Shuzojo in Tanba, Hyogo, a brewery founded in 1849 whose brand name was bestowed by haiku poet Kyoshi Takahama. Brewed with the ultra-soft Chinjutenzen well water and year-round production methods, this daiginjo achieves delicate aromatic refinement suited to the brand's artistic identity.
