Limited-release daiginjo made from Yamada Nishiki at Eau de Vie Shonai in Sakata, Yamagata, brewed in small batches using fully hand-crafted methods. The brewery uses deep-well water drawn from 50 meters below the Japan Sea coastline, contributing to the clean, delicate base of this high-polish expression.
