Nippon Bare at 70% polishing is brewed as a straightforward junmai at this Gifu brewery best known for its aged koshu. The brewery uses soft water from a tributary of the Nagara River and produces all sake without charcoal filtration, resulting in a fuller, unstripped flavor.
