Junmai Ginjo from Hito Gokochi rice at 55% polish at Yukawa Shuzo in the Kiso highlands of Nagano, brewed with soft Kiso River water. Hito Gokochi rice produces a broad, rounded flavor with ripe apple-like sweetness and refreshing acidity that balance each other across a long finish.
