Junmai Ginjo kimoto brewed with Aiyama rice polished to 55% at Yukawa Shuzo in the Kiso highlands of Nagano, one of Japan's highest-elevation breweries at approximately 936 meters. Aiyama rice contributes a juicy, concentrated sweetness, while the kimoto method adds a bright, characteristic acidity.
