Junmai Daiginjo Kajokotobuki is a pure rice daiginjo under the flagship Kajokotobuki label from Kotobuki Toraya Shuzo in Yamagata. No added alcohol and fine polishing of the rice combine to produce a sake with both purity and aromatic depth. Yamagata is one of Japan's most recognized daiginjo-producing prefectures, and this sake reflects that regional identity.
