Iwamiginzan Junmai Ginjo from Ichinomiya Shuzo in Oda City, Shimane, is brewed without added alcohol and with rice polished to at least 60 percent, producing a pure-rice sake with the characteristic floral and fruit-forward aromatics of the ginjo class. Shimane's San'in coast climate, marked by cool winters and abundant rainfall, creates ideal conditions for the slow fermentation that develops these complex aromas. The Iwami Ginzan name, referencing the region's historic silver mine, grounds this sake in the cultural and natural heritage of western Japan.
