Junmai Ginjo Rika Tsuyahime from Ichinomiya Shuzo in Shimane uses Tsuyahime, a rice variety developed in Yamagata Prefecture renowned for its bright, clean flavor and glossy grain, here employed in a Shimane junmai ginjo to add a distinctive cross-regional character. Tsuyahime's low protein content and clean starch composition support a light, elegantly aromatic fermentation that pairs naturally with the ginjo-grade polishing and pure-rice method. The combination of Yamagata's celebrated rice with Shimane's soft San'in water produces a sake of delicate refinement under the Rika label.
