Hanazakari Junmai Omachi is built around the ancient Omachi rice variety, one of Japan's oldest surviving sake rice strains, known for producing sake with earthy minerality and a structured, umami-driven body. Hanamori Shuzo in Yaotsu, Gifu, applies its traditional slow-drip extraction technique and the country's sole surviving manually operated 'Yaegaki-style press' to Omachi, coaxing out the variety's inherent complexity without aggressive pressing. The result is a pure rice sake of notable depth from a brewery committed to methods that have largely disappeared elsewhere.
