Ginjo namacho-zozo (live-stored) sake from this Nagano kura in the Suwa region, polished to 59% using Tateshina mountain spring water known locally as Menogami water. The brewery contracts local Nagano farmers to grow Miyama Nishiki and Nagano rice, and the clear mountain air contributes to the brew's clean character. Smooth, gently sweet, and soft on the palate with a mild mellow finish.
