Description

Furisode Junmai Ginjo Hiyaoroshi is a seasonal autumn release from Kitagawahonke, following the hiyaoroshi tradition of allowing sake to mature through summer before release in the fall without a second pasteurization. This single-pasteurization process contributes a rounded, mellow texture and deeper flavor compared to year-round expressions. Brewed in Fushimi with locally sourced soft water, it showcases the character that summer aging imparts to junmai ginjo sake.
