Emishiki Junmai Daiginjo Yamada Nishiki uses the king of sake rice polished to 50% from Emishiki Shuzo in Koka City, Shiga. Founded in 1892, this brewery under 5th-generation Takeshima Mitsuyoshi uses no brewing alcohol, enzymes, or fermentation accelerators, instead relying on kimoto-style starters and traditional sase-shiki basket pressing with 100% Shiga contract-farmed Yamada Nishiki.
