Suisei (Comet), a Hokkaido-bred sake rice, is polished to 40% for this daiginjo from Goudou Shussei's Taisetsu no Kura brand, brewed in Asahikawa, long known as the Nada of the North. Soft, fruit-forward aromas and a clean finish come from using snowmelt water from the Taisetsu mountain range.
