Brewed by Tajime General Partnership (Tajimiya) in Hyogo's Asago city using locally grown Dontokoi table rice, this junmai is crafted under the brewery's philosophy that every grain of rice holds infinite potential. The Dontokoi rice, a cross of Kinuhikari and Hokuriku 120, gives the sake a well-balanced umami and acidity that broadens further when warmed.
