"사람, 쌀, 구조가 하나로 어우러져 좋은 사케를 빚는다"는 철학 아래 1922년에 창업하였습니다. 양조장 주변 논에서 야마다니시키를 직접 재배하고, 독자적인 목제 고시키와 긴조 준비 탱크 등 특별한 도구를 사용하며, 1988년부터는 현내에서 구하기 어려운 야마다니시키 재배를 시작했습니다. 브랜드명 "히가시이치"는 "동양 최고의 사케를 목표로 한다"는 뜻을 담고 있습니다.
