Junmai Ginjo genshu at 60% polish, bottled as a muroka (uncharcoal-filtered) kinugoshi origarami (fine-lees suspended) expression at Yukitsubaki Shuzo in Kamo, Niigata. The fine sediment contributes a creamy texture, while the absence of filtration preserves the natural color and lively character of the pressing.
