Description

A junmai ginjo brewed with Matsuri Bare rice grown using the aigamo (duck farming) method, a practice revived at the brewery in 2000 using yamaha fermentation. The soft water drawn from Mount Kongodoji contributes to the gentle, rounded character of this Tango-region sake.

The brewery, which consists of the mother, was founded in the Meiji era, but after the war during the war in 1945, four local sake brewery companies gathered in 1950 and established Takeno Sake Brewery. The rich underwater water of the Reiyama Kongo Doyo, located in the center of the Tango Peninsula, is given to us as a treasure trove of crops, moisturizing the flat ground below. Takeno Sake Brewery is located next to the countryside, where the first agricultural land reform was carried out in Kyoto Prefecture in the Meiji era. For these reasons, there is always a rich underground water under the warehouse. We value the locals and make sake that focuses on rice.
