原本父亲喜爱,水户部家也自酿梅酒,觉得家酿比市售梅酒美味得多,这是开始制作的契机之一。作为后起之秀,我们坚持以日本酒为基底,酿造真正美味的梅酒。请务必体验用日本酒浸渍的梅酒风味。从梅的品种、成熟度,到所用酒的味道、糖的种类、浸渍方法乃至作业时间,反复进行了多次实验。为了做出好东西,"找出什么是必要的、什么是不足的,在不断试错中克服困难,持续踏实地重复这些工作非常重要"。龙先生在随笔中写下的这句话影响深远。梅酒酿造与日本酒酿造自然不同,但也有另一番乐趣。获奖经历:2011年"天满天神梅酒大会"亚军,2015年"梅酒全国制霸酒类大会"冠军。
