Ura Gasanryu Kouka Ginjo

Dewa no Sato milled to 65% in a ginjo from the Ura Gasanryu limited series, Yonezawa, Yamagata. The high shinpaku rate and low protein content of Dewa no Sato enable clean, elegant brewing at this polishing level, yielding a refreshing ginjo aroma, light citrus fruit character, and a crisp, well-defined finish.
