Yamada Nishiki is pressed as tobin nakadori at Uno Shuzojo in Fukui's Ono city, capturing only the cleanest mid-run portion of the press in small tobin vessels for low-temperature storage. Founded in 1620 near the Hakusan mountain range and its designated pure-water source, the brewery has over three decades of experience with Yamada Nishiki daiginjo.
