Yamada Nishiki milled to 40% in a daiginjo named after Mori Ogai, the celebrated Meiji-era novelist and physician born in Tsuwano. The brewery, founded in 1791 (Kansei 3) in the castle town of Tsuwano, Shimane, draws on a deep well despite the elevated terrain and produces sake noted for a full, assertive flavor suited to a range of cuisines.
