对酒进行低温杀菌可使酶和酵母失活,从而提高酒的保存性。这一技术自室町时代末期便以「煮酒」之名在杜氏之间广为人知。在此基础上进一步精炼发展出「火当て」技术,使日本清酒成为世界上罕见的完全不使用防腐剂的酒类。旭酒造不计成本,在5℃以下充填瓶后以温水淋浴方式进行热杀菌并迅速冷却,将热处理对品质的影响降至最低。进一步通过将二氧化碳微气泡化添加于酒中,实现了在65℃15秒以下的短时间内达到同等效果。
