使用山田锦的遗传亲本——历史悠久的滋贺县产米「短秆渡船」,精米步合80%,在爱庄町的藤井本家以生酛酿造法精心酿制。这座创业于1831年的酒藏自1945年起便向宫中献上御用酒,不添加人工乳酸,而是以天然乳酸菌培育出独特的酸味。
