Toki is a brand from Yoshinogawa Co., Ltd., one of Japan's oldest continuously operating breweries, founded in 1548 in Nagaoka City, Niigata Prefecture. The brewery draws on snowmelt from the Echigo mountain range and alluvial water from the Shinano River, long celebrated as Sweet Water of Heaven and Earth, to produce sake in the clean, dry Niigata ginjo tradition.
