Shizengo

Shizengo is brewed by the Oki Daikichi Honten brewery, a producer based in Fukushima Prefecture whose Shizengo label has long focused on pure-rice brewing without additives. The Daikichi Honten family brewery began operations in the Meiji era and the Shizengo brand, launched by the previous generation in 1975, was among the early pure junmai labels in Japan to make organic contract-farmed rice its foundation. The Shizengo BIO series, introduced after the brewery was rebuilt following the 2011 earthquake, highlights lactic-acid-forward fermentation and a modern, lighter acid profile.
