大嶺酒造溯源于1822年，2010年在山口县美祢市停酿50年后复兴，重启该地的清酒生产。酒造将本地栽培的山田锦与当地称为"神明之水"的弁天水相结合，并以颠覆传统包装惯例的极简白瓶呈现清酒。大嶺迅速赢得国际声誉，先后在米其林三星餐厅与2013年达沃斯世界经济论坛亮相，并自2020年起与菲瑞尔·威廉姆斯及NIGO展开合作。
