Nifudazake

Kamonishiki Shuzo, founded in 1893 in Kamo, Niigata, developed Nifudazake as an in-house brand in 2016, driven by then-25-year-old heir-apparent Yuichi Tanaka and his analytical, engineering-minded approach to sake. The label's defining visual is its shipping-tag label, a deliberate nod to the idea of sake going straight from the tank to the customer, and its standard baseline is junmai daiginjo polished to 50 percent or below. Nifudazake balances Niigata's clean, refreshing clarity with a deliberate presence of sweetness and acidity, producing a modern, food-friendly style that has drawn a strong following since launch.
