Yano Shuzo, established over 200 years ago in Kashima, Saga, operates from a brewery certified as a Prefectural Heritage and designated as a Registered Tangible Cultural Property of Japan. In 2003, the brewery made a decisive shift to junmai-shu and released a Junmai-shu Declaration, which gave rise to its most representative brand, Hizen Kuragokoro. The sake's lighter, cleaner character deliberately stands apart from the typically mellow, rich style prevalent in the Kashima and Ureshino brewing region.
