Ginreigassan, meaning silver peak of Mount Gassan, is the flagship of Gassan Sake Brewery, founded in 1972 in Sagae City, Yamagata Prefecture, at the foot of Mount Gassan, the most snow-laden peak of the Dewa Sanzan range. The brewery's water is snowmelt that takes an estimated 400 years to filter through the mountain and emerge as a pristine underground spring, recognized as one of Japan's Top 100 Famous Waters. Brewers combine traditional handmade techniques with ongoing process refinement, producing sake with a gentle, mellow character and a subtle aroma likened to fresh snow.
