這是出於想要釀造一款能搭配公司進口的塔納拉產頂級生火腿的酒而誕生的,是一款口味獨特且實驗性的作品。這是首次將通常用於葡萄酒的蘋果酸乳酸發酵(MLF)技術應用於日本酒的嘗試。MLF是將酒精中的蘋果酸轉化為乳酸的發酵過程,由此使酒的口感變得非常圓潤。此外,乳酸是一種溫熱時更加美味的優質酸,加熱飲用時也可以享受到別樣的風味。雖然基本上希望精心釀造能充分感受米鮮味的正統酒款,但同時也想創作富有趣味的實驗性作品。
