Description

A fukuro-tsuri (bag-drip) junmai daiginjo from Kojima Sohonten's Toko label in Yamagata, brewed with Yukimegami, a premium sake rice variety developed in Yamagata prefecture. Yukimegami, whose name means 'Snow Goddess,' is known for its large grains and excellent koji solubility, producing a soft, elegant flavor with a clean finish. The gravity-drip pressing method preserves the delicate aromatics of both the daiginjo fermentation and the Yukimegami rice without mechanical stress.
