Omachi rice polished to 60% is crafted using the yamaoroshi starter method in this tokubetsu junmai from Yamaguchi. Omachi, an heirloom variety from Okayama known for its large grain and pronounced umami, pairs with the wild-lactic complexity of yamaoroshi fermentation.
