Morohaku Honjozo from Nishida Shuzo in Nara is brewed under the label that references the ancient brewing term morohaku, which described sake made entirely from polished white rice, a technique pioneered by Nara's temple brewers in the Muromachi era. Honjozo classification allows a modest addition of brewer's alcohol to sharpen the profile.
