Shiboritate (freshly pressed, unpasteurized) junmai using Yamada Nishiki polished to 60%, released immediately after pressing in winter. The hard Arakawa spring water foundation gives it a strong frame, while the fresh-press character brings a vibrant, grain-forward vigor that softens with temperature.
