Tokubetsu junmai polished to 60%, released in autumn as a hiyaoroshi after one heat treatment and a full summer of tank maturation. From Niigata's Shinmei Masamune lineup, hiyaoroshi releases are traditionally known for a settled, deepened flavor that the autumn resting period develops.
