「生酛釀造」被稱為最為傳統的釀造方式。然而,我認為若要深入了解這種「山廢釀造」,必須親自挑戰生酛釀造,於是第一次嘗試釀製。使用的米為福井縣產新酒米。初次挑戰釀就的日本酒,呈現出清爽的辛口風格!
