Yamatsuru Junmai Ginjo is brewed by Nakamotoshuzouten in Nara with rice polished to the ginjo standard, producing a sake that balances fruity ginjo aromas with the fuller body of a junmai. Fermentation without added alcohol allows the natural rice sweetness and umami to come through alongside floral top notes. Nara's ancient brewing environment lends this sake a sense of regional character and depth.
