Description

Brewed with a Sake no Hana (yeast lees) starter culture, this junmai ginjo represents one of the more unusual fermentation methods in the Dewanoyuki lineup, reflecting the brewery's willingness to employ both traditional kimoto and alternative approaches. The Tsuruoka brewery hand-washes all rice and draws on soft mountain water for its entire production.
