本釀造 Nohime

Description

Nohime is brewed in the basement cellars of Nihon-izumi, one of Japan's rare underground sake facilities located one minute from Gifu Station. The stable subterranean temperature allows year-round brewing, and pressing is carried out in a traditional wooden tank that takes three days and yields a mellow, low-off-flavor sake. Soft and rounded on the palate, it is recommended warm at a gentle temperature.

日本泉酒造全年釀造日本酒,依靠先進設備嚴格管控溫度,使酒藏內始終維持穩定的溫度環境,實現四季持續釀造,可全年供應新鮮榨製的日本酒。因全年釀造,可用小型酒槽少量精心釀造,並盡量不使用炭過濾,以保留米的原本香氣與旨味,成品呈現米特有的山吹色。釀造用水採用百名水之一、長良川支流「清水町」地名處湧出的清冽地下水,以此命名「日本泉」。此外,酒藏堅持使用傳統木槽(槽)榨酒,以時間慢慢擠壓,釀出餘味少、圓潤醇厚的日本酒。
