A ginjo shiboritate namazake from Tentaka Shuzo in Tochigi, brewed and bottled fresh in winter then cold-stored at near-freezing temperatures for half a year until its summer nagoshi release. The six-month cellaring mellows the rough edges of the pressing while preserving a lively, structured ginjo character.
