創業於元祿元年(1688年),由平戶藩主賜予釀造許可開始釀酒。創始人福田長治郎以「釀酒以心為本,風氣由此而生」為信念,代代傳承平戶的文化與釀酒技術。平戶市位於長崎縣西北部,是日本最早的海外貿易港,曾與葡萄牙、荷蘭及英國往來,繁盛一時。以「從種米到釀酒」為目標,致力於釀造只有在這片豐饒平戶才能誕生的清酒,成為深受長崎喜愛的地酒。
