Yamada Nishiki polished to 40% forms the foundation of this daiginjo from the Dokan Gura in Shiga. Crafted with 100% Shiga-grown rice using groundwater drawn from the brewery's well, it delivers the rice's inherent umami and sweetness with a soft, refined character.
