Dai Shinshu Betsugakoi Junmai Ginjo Bangaihin Nama is an out-of-series (bangaihin) unpasteurized expression from the Betsugakoi aged collection of Daishinshu Shuzo in Nagano. Using Hitogokochi and released fresh without pasteurization, this experimental or limited expression from the fully handcrafted brewery with self-cultivated yeast captures the vivid namazake character of Northern Alps water-fed fermentation.
